Pesto sauce in Greek cooking is good for you and good on practically everything! We use this recipe at all of our Westside Market NYC stores, for all types of recipes, and of course, we make it from scratch. One of Maria's absolute favorites!

INGREDIENTS 1/4 pound fresh basil
4 garlic cloves
1 1/2 cups EVOO
1/2 cup walnuts
1/4 cup pine nuts
1/2 cup Parmigiano-Reggiano cheese, grated
1 teaspoon freshly ground black pepper
1 teaspoon Kosher sea salt
METHOD
1) Using a food processor, pulse all ingredients for 5 seconds three to four times, shutting off the processor and scraping down the bowl as necessary.
2) Pesto should be well combined and broken down, but not fully pureed.
