
Serves 4-6
A summertime seafood specialty with the sweetness of honey.
INGREDIENTS
1 pound fresh bay scallops
1/4 teaspoon kosher sea salt
1/4 teaspoon freshly ground black pepper
1/2 cup EVOO
1/2 large white onion, sliced
5 garlic cloves, sliced
1/2 cup all purpose flour
2 pinches kosher sea salt and freshly ground black pepper
1/2 cup white wine
METHOD
1) Lightly season the scallops with salt and pepper
2) In a large skillet or saute pan, heat the oil on medium-high heat for 1-2 minutes
3) Add the onion, garlic, and sauce for 3-4 minutes until starting to brown
4) In a mixing bowl, add 2 pinches of salt and pepper to the flour and mix well
5) Dredge the scallops in the flour and add to the hot pan
6) Turn the scallops in the pan periodically for 3-5 minutes to get an even golden color
7) Add the honey to the pan and gently mix through
8) Add the white wine to the pan and continue to cook until the onions and honey darken to a deep, golden brown, about another 5-7 minutes
9) Remove pan from heat
10) Plate the scallops with the sauce from the pan and serve!
