Maria's Homemade Beet Salad with Garlic Yogurt

Serves 3-4


1 pound fresh beets, boiled until tender, peeled and cubed

2 garlic cloves, minced

4 tablespoons Greek yogurt

2 tablespoons EVOO

1 tablespoon champagne vinegar

1/2 teaspoon kosher sea salt

1/4 teaspoon freshly ground black pepper

1 orange, peeled and segmented

1/4 cup walnuts, finely crushed

2 sprigs parsley, cleaned and dried


1) In a mixing bowl thoroughly combine the yogurt and garlic, reserve a couple dollops of mixture for garnish.

2) In a mixing bowl, add oil, vinegar, salt, and freshly ground black pepper and whip with a fork or a wire whisk.

3) Add the beets to the dressing and toss gently to coat.

4) Serve the dressed beets garnished with oranges, walnuts, dollops of garlic yogurt, and parsley sprigs.
