I had this salad at a restaurant and liked it because unlike traditional Caesar salad, it had butternut squash instead of croutons, making it tastier and lighter, and kale instead of romaine lettuce, which made it healthier.
INGREDIENTS
2 bunches of fresh kale, stems removed, chopping thinly
Maria's Caesar salad dressing (page 128 in Made with Love)
1 large red onion, sliced
2 cups of butternut squash, cubed and divided in half
1/2 cup shaved Parmigiano-Reggiano cheese, divided in half
Freshly ground black pepper, to taste
METHOD
1) In a large mixing bowl, toss the kale and salad dressing, with half the Parmigiano-Reggiano cheese and half of the butternut squash pieces.
2) Top with the sliced onion, remaining butternut squash and shaved Parmigiano-Reggiano cheese.
3) Plate and serve with freshly ground black pepper.
